These delicious, savory rosemary parmesan sourdough discard crackers are a no wait sourdough recipe. Whip up in minutes and devour!

I love sourdough but I am not someone who gets really fancy with it and I have a hard time waiting 12-24 to make a recipe that why I love no wait sourdough recipes like these sourdough discard crackers.
Whether you are a beginner or advanced sourdough baker I think these crackers will be a crowd pleaser (unless you are like my husband and think that rosemary tastes like pine needles).
Do I need to use “discard”?
No. I don’t have discard from my starter, so I just use some not recently fed sourdough starter. This recipe is really flexible which is one of the reasons why I love it.
Do I need to use freshly ground whole wheat flour?
Yes and no. I have not tried this sourdough discard crackers recipe with all-purpose flour. I don’t see why it wouldn’t work but at the same time you will lose a lot of the goodness of the recipe by using just whole wheat flour.
These crackers bring out the best in freshly ground whole wheat flour. I would only switch out up to half of the flour to the unbleached all-purpose flour. Grinding wheat berries into flour is so easy, I tell you how to do it here.

Can I switch out the herbs?
Yes, if you are like my husband and think rosemary looks and tastes like pine needles, feel free to switch out for 1/4 cup. of your preferred herbs and spices. One thing to remember is that if you use fresh garlic is can turn a neon green as it bakes.
How to make rosemary, parmesan sourdough discard crackers
Gather the following ingredients and mix in a medium bowl.
1 cup. Freshly ground whole wheat flour
1 cup. sourdough discard/starter
1/2 cup. Grated parmesan
1/4 cup. Rosemary
1/4 cup. Olive oil
1/2 tsp. Real salt
Directions:

In a medium sized bowl, combine all of the ingredients. Mix until a ball forms, it should not be sticky if it is add some more fresh ground whole wheat flour.

Divide dough in half and form each half into a rectangle. Cover with plastic wrap and chill for up to 2 hours or if you are in a hurry just start rolling it out.

Preheat oven to 350 degrees. Place a piece of parchment paper on your surface, lightly dust with flour and place one of the half’s of dough on it. Lightly dust your rolling pin with flour and roll out crackers as thin as possible (1/16th -1/8th inch thick).

Pick up parchment paper and transfer to a baking sheet, cut into preferred shape if desired.

Bake for 20-25 minutes or until the edges are just turning brown.

Store crackers in a sealed container for up to two weeks.
