
I love making food from scratch and using whole wheat. However I don’t always have the time or energy to make something like pancakes from scratch every day. This whole wheat pancake mix takes the most time consuming parts of it, grinding the wheat and measuring ingredients out of the equation.
Why Make Your Own Whole Wheat Pancake Mix?
Making your own mixes makes cooking from scratch so much easier. Using this mix I am able to make pancakes multiple times a week without spending a bunch of time or money. This mix has no preservatives or fillers.

Does It Have To Be Refridgerated?
Yes. Both the butter and the whole wheat flour need to be refrigerated to keep from going rancid. However, if this mix gets left out on the counter for a while you don’t need to panic and throw it away.
Can I make this Dairy Free?
Yes you can. You can substitute either coconut oil or lard for the butter in this recipe. However it might change the texture of the mix a bit.
Can I Add In Dried Fruit?
Yes. However the dried fruit will want to work its way down to the bottom of the mix so you will have to stir or shake it well before using it.
Can I Use Yogurt In This Recipe?
The milk in this recipe can be substituted very easily for yogurt. If you prefer a fluffier pancake the yogurt works better.
Do I have To Use Vanilla Powder?
No, but it makes the difference between okay pancake mix and wow! Pancake mix.
Can I Make This In Bulk?
Absolutely! I usually make at least a double batch of mix but I am thinking about making a x5 batch and storing it in the freezer.

How Long Does It Last In The Refrigerator?
It will last for up to 1 month in the refrigerator before the whole wheat will start to deteriorate. I have used it past one month and it still tastes great but the nutrition will be a lot less. To make it last longer you can put it in the freezer.
How To Make Whole Wheat Pancake Mix
Ingredients:
7 Cups of fresh ground whole wheat flour
12 TBS chilled butter
10 tsp. baking powder
2.5 tsp. salt
1/4 Cup. sugar
3 TBS vanilla powder
Step 1. Start with grinding wheat, I have a great tutorial on how to do that here.
Step 2. Place whole wheat flour, salt, baking powder, sugar, vanilla powder and butter in blender. Pulse until butter is cut into the flour. You are looking for a slightly wet sand texture. Or blend butter and flour together by pulsing and add the other ingredients in a mixing bowl later.
Step 3. Place into a container (I use a half gallon glass mason jar) and label. Make sure you label the mix well so you won’t have to second guess yourself about what is in the container.
Step 4. Either place the labeled mix into the refrigerator or freezer or use to make pancakes.
To Make Pancakes From The Whole Wheat Pancake Mix
Step 1. Preheat a griddle to medium heat (I use a cast iron one like this).
Step 2. Pull whole wheat pancake mix out of refrigerator or freezer. Add 1 1/2 cups of the mix to a medium sized bowl. Into the bowl add 1 cup of milk and 3 eggs, mix well.

Step 3. Pour a small amount onto the griddle cook until bubble start to pop around the edges. Flip them once and let them cook for a little while on the other side. Pull them off the griddle and top with your favorite toppings. Our favorite toppings are maple syrup and apple sauce.

Whole Wheat Pancake Mix

Easy to make whole wheat pancake mix from scratch.
Ingredients
- 7 Cups. Fresh Ground Whole Wheat Flour
- 12 TBS. Butter
- 10 tsp. Baking Powder
- 1/4 Cup. Sugar
- 2 1/2 tsp. Salt
- 3 TBS. Vanilla Powder
Instructions
- Place the flour, baking powder, salt, sugar, vanilla powder and cubed chilled butter into blender.
- Pulse until well combined.
- Place into a large container or jar and label clearly using printable labels.
