I love a good breakfast sausage with eggs and toast for breakfast but most seasoning blends have ingredients that I don’t like, so I made my own.
Since we raise our own pigs and we have food allergies making our own sausage is essential. Having healthy, MSG free breakfast sausage can turn plain eggs into a full meal. I have tried many different breakfast sausage seasoning recipes and I think I have one that is actually what we like in a breakfast sausage.
To me a breakfast sausage seasoning recipe should have some sweetness to it, some heat and lots of flavor and I think this is the perfect blend of that. Plus, I added it some organ meats and nettle leaf powder to add the extra nutrient boost.
How to add organ meats to your ground pork
If you are butchering your own pigs this is super easy. When it comes time to make your ground pork simple chop up your liver and heart and mix those pieces in with the pieces of pork and grind as normal. I like a 10:1 ratio but you can go as high as 5:1 before it gets crazy strong. I would just add more seasoning if you have a higher organ meat ratio to help disguise the taste if your family does not like it.
What if I don’t have the organ meats in my ground pork?
You have two options you can either leave out all of the organ meats and have a delicious breakfast sausage seasoning or you can add in 1 1/2 tsp. liver powder (learn how to make your own here)
Is this a dry breakfast sausage seasoning recipe?
Yes and no. You could just mix up the dry ingredients and store them in a jar to use when you want some wonderful sausage and add the two wet ingredients then or you could just do the dry ingredients.
Can I leave out the maple syrup?
Yes, you can however I think both the maple flavor and the sweetness adds something to it. However, if you can’t do maple syrup or are out of it you can totally leave it out.
How to make breakfast sausage seasoning recipe?
1 lbs. Ground pork with organ meat or add 1 1/2 tsp. liver powder
1 TBS. Pure Maple Syrup
1 TBS. Apple Cider Vinegar
2 tsp. Thyme
2 tsp. Sage
2 tsp. Nettle Leaf
1 1/2 tsp. Real Salt
1 tsp. Fennel
1/2 tsp. Red Pepper Flakes
1/2 tsp. Garlic Powder
1/2 tsp. Onion Powder
1/2 tsp. Paprika
1/2 tsp. Black Pepper
1/2 tsp. Liver powder (optional)
Mix all ingredients together and cook until well done.
Breakfast Sausage Seasoning Recipe
Ingredients
- 1 lbs. Ground pork with organ meat or add 1 1/2 tsp. liver powder
- 1 TBS. Pure Maple Syrup
- 1 TBS. Apple Cider Vinegar
- 2 tsp. Thyme
- 2 tsp. Sage
- 2 tsp. Nettle Leaf
- 1 1/2 tsp. Real Salt
- 1 tsp. Fennel
- 1/2 tsp. Red Pepper Flakes
- 1/2 tsp. Garlic Powder
- 1/2 tsp. Onion Powder
- 1/2 tsp. Paprika
- 1/2 tsp. Black Pepper
- 1/2 tsp. Liver powder (optional)
Instructions
- Mix dry ingredients together
- Add dry and wet ingredients to ground pork and mix together well.
- Form into patties and cook until well done.
