
Chocolate chip zucchini muffins with liver powder, really? There are few foods my family love more than muffins with chocolate chips in them, so I thought why not add in some liver powder and brewer’s yeast for a super food punch. I know a lot of people could think of reasons not to, but my family loves them just the same. In fact, nobody knows unless I tell them. Mission accomplished!
I am kind of obsessed with the idea of sneaking super foods into different dishes especially organ meats. I do not like the taste of liver, I am learning to like the taste of liver myself so I need all of the help I can get. My thought is that if I can give my family a micro dose of organ meats each day it won’t be necessary for us to sit down to a meal of liver in order to get the health benefits of it. Do I Need To Include The Liver Powder In This Recipe?
Nope. These chocolate zucchini muffins are really delicious muffins with or without the liver powder.

Can I Make These Chocolate Chip Zucchini Muffins With Liver Powder Gluten Free?
Yes you can substitute the fresh ground whole wheat flour for GF oat flour with 1 tsp. of xanthum gum. Omit the brewers yeast as well as it is not GF.
Can I Use Whole Wheat Flour From The Store?
No! Whole wheat flour from the store is nasty! Please just grind your own wheat berries into whole wheat flour. It is super easy, and I tell you how to here. If you can’t or don’t have time to grind your own whole wheat flour (it doesn’t take that long) use oat flour with 1 tsp. of xanthum gum.
All-purpose flour would not work well in this recipe you need something a litter heartier than white flour. Bonus, these can be used as a meal in a pinch.
Can I Make These Sugar Free?
Yes. I frequently leave out the sugar and my family doesn’t seem to really notice. I do tend to increase the chocolate chips when I do this though, which is their favorite part.
Can I Use Honey In This Recipe?
Yes just cut the amount in half so instead of 1 cup. sugar use 1/2 cup. honey.

Help I am Out of Cultured Buttermilk!
If you run out of your homemade cultured buttermilk (learn how to make it here) simply add 1 tsp. vinegar or lemon juice to whole milk stir and let sit for a few minutes or use powdered buttermilk and mix it with water.
How To Make Chocolate Chip Zucchini Muffins with Liver Powder
Gather the following ingredients:
3 cups. Fresh Ground Whole Wheat Flour
1 TBS. Cinnamon
1/4 tsp. Nutmeg
1 tsp. Baking Soda
1 tsp. Baking Powder
1/2 tsp. Salt
2 Eggs @ Room Temperature
1/3 cup. Olive Oil
3/4 cup. Sour Cream
1/3 cup. Cultured Buttermilk (learn to make it here)
1 cup. Sugar
2 tsp. Vanilla Extract
2 1/2 cups. Zucchini Grated
4 oz. Dark Chocolate Chips
Preheat your oven to 350 degrees
Into your kitchen aid mixer add the eggs, olive oil, sour cream, cultured buttermilk, sugar and vanilla extract. Mix until well combined.
In a separate bowl, mix fresh ground whole wheat flour, salt, cinnamon, nutmeg, liver powder, brewers yeast, baking soda and baking powder together.
Add dry ingredients to the wet and mix until just combined.
Add in grated zucchini and chocolate chips, mix again.

Fill muffin pans with muffin liners and fill 3/4 of the way full with the muffin batter.
Place pans in pre-heated oven and bake for 20 minutes for full sized muffins or 13 minutes for mini muffins or until a toothpick inserted into the middle of a muffin comes out clean.
