Should I use Dutched Cocoa or Regular Cocoa?
I prefer to use dutched cocoa for a richer, darker chocolate flavor. It seems to just in general create a better rounded flavor. Regular cocoa works well so if you don’t have dutched cocoa or don’t like a dark chocolate flavor use regular.
Can I Make These With All-Purpose Flour?
Yes you can. I prefer them made with whole wheat flour because they don’t spike my blood sugar as much. Don’t make these with whole wheat flour bought at the store it needs to be fresh ground whole wheat flour or all-purpose flour.
Can I make These Best Ever Double Chocolate Cookies Gluten Free?
Yes but if you are not gluten free and are making them for someone who is you need to be very careful of contamination. A gf oat flour is much better in this recipe than gf all-purpose flour or 1-for-1 flour. Just add 2 teaspoons of Xanthan Gum to the recipe to help them to stay together.
They Don’t Look Done, Are They?
You need to pull them out of the oven when the edges are just starting to firm up. The centers will still be gooey they will cook more as they cool outside of the oven. If you wait to pull them out until they look done they will be burned and crispy when cool.
Best Ever Double Chocolate Cookies Ingreients
1 1/4 Cups of Softened Butter
1 1/2 Cups of Sugar
2 Eggs
2 tsp. Vanilla
2 Cups of Fresh Ground Whole Wheat Flour
3/4 Cup of Cocoa Powder
1 tsp. Baking Soda
1/4 tsp. Salt
1/2 Bag of Chocolate Chips
How Make Best Ever Double Chocolate Cookies
Preheat oven to 350 degrees.
In a stand mixer blend together butter and sugar together until creamy. Blend in one egg at a time and blend in vanilla.
In a medium bowl mix together flour, cocoa powder and salt. Slowly add dry ingredients to wet ingredients once just blended add in a half bag of chocolate chips and stir.
Spoon cookie dough onto baking sheets lined with parchment paper.
Bake in preheated oven 8-12 minutes. Pull out of oven and let cool on baking sheet for 15 minutes before moving to cooling rack or plate.

I make the Gluten Free version with oat flour and they turn out soooo good. The texture is just like a Gluten cookie.
